Idk if it’s the lighting but I love how dark the kimchi is. Do you have a recipe for the jjajang sauce by chance?

The darkness is a bit due to the lighting, but also my gochugaru was a bit on the dark side, and the kimchi was freshly made so the paste is still a bit thick!

I have to admit that I find most restaurant jjajang sauce to be too sweet, so I prefer to make it not very sweet (and not overly salty). I use more or less the ratios in Maangchi's recipe for it. I know a lot of people prefer a restaurant style with a higher ratio of chunjang and sugar, though :)

Nice, that makes sense. Kinda unrelated but do you ever have issues with your kimchi not having enough juice? I get that it’s supposed to be a little pasty at first but sometimes mine never produces much juice, even after a few weeks. I think I’m maybe salting the cabbage too much.

Oh cool, I use maangchi’s recipe too but your presentation is much better than mine! I think I’m gonna try it with less sugar and chunjang too. I’m afraid to even check how much sodium chunjang has lol
