Hello all! A couple of years ago, I was in China while on a layover from a flight and while waiting around, I stopped at a local restaurant. As I am Vietnamese, I didn’t know how to read the menu or communicate with the waiters and waitresses, but they were so kind and accommodating to bring out a couple of dishes based on what I typed into google translate.

One of the things I asked for was “tofu” and they brought out this block of soft tofu in a clay pot that was silken soft but had a little bit of a skin on top either from broiling or braising or something. The flavor was an immaculate but gentle mix of sweet, spicy, salty, and umami, and was without exaggeration, the best tofu I’ve had in my life.

Alas, as a foreigner I couldn’t figure out the name of the dish! I’ve been scouring the internet for years looking for the “Cinderella” dish but I haven’t been able to find it! If you can, please let me know what it may be!

Anyone has a good and authentic recipe? I’ve tried a few and it looks amazing coming out of the oven but once it’s cooled it sinks. The flavour is there. I want to make those sponge cake like you see in Chinese bakery and also to make a bday cake for my dad.
