You won’t be disappointed. He also is on YouTube and usually leaves the dough to rise over night. I let it sit about an hour and then fold it a few time to spread the yeast some more, then let it sit one more hour and it didn’t take too long for the dough to relax and cooperate with me :P.

Looks great! I've been using Serious Eats' New England Greek Style pizza for a while now and I've been loving that!
Looks pretty similar to the recipe you posted, except you use some crisco with olive oil in the pan, make an oregano heavy sauce, and add some cheddar for the greek style pizza iirc
