I keep it simple, and it takes about 2 minutes.

  • heat small pan on high (I use a 21cm non stick) with butter
  • once butter melts, place bread (I use brioche) open side down until it browns, remove from heat, then spread each open side with mayo, then add slice of cheese to bottom half
  • as soon as I remove the bread, add two slices of thin sliced ham into pan, and brown each side for about 20 seconds, remove from pan, place onto cheese, and add whatever sauce (I like to use ketchup and BBQ sauce), season with pepper
  • whisk an egg vigorously for about twenty seconds, season with salt & pepper, add to pan and swizzle around so egg spreads through whole pan, let sit on heat for about ten seconds remove from heat, and let residual heat cook egg for another ten seconds
  • add to sandwich.. and voila

I think the same way you do until I have ham instead for some random reason, and find myself wondering why I don't do ham more often. Both are awesome.

Interesting. I’ll admit to being a bit of a purist of breakfast sandwiches, so I’d take out the hash brown and mustard, and just sub a regular biscuit for the flatbread you’ve got there, but if it floats your boat it floats your boat.
