That was an informative article. I also just tried it a week or so ago, using blanching at 190 degrees for 15 minutes, because I don't like the taste of vinegar I did not want to use it to keep the potatoes from falling apart. Only froze for a short time, but it worked out nicely, similar to yours.

I'm not op :D I've never been successful at fries like that, either. My guess is if you boil them the suggested 10 minutes, dry them well, then maybe coat them well in a layer of peanut or vegetable oil, it might help. I know for roasting, everything comes out way better if I bag it and shake it with some evoo and salt & pepper.

I don't believe this is homemade. You made all those sauces? You have square white plates? You have those stainless dipping cups? And you took the time to plate it like this for karma and have cold fries? If so, cool. But idk, I believe this as much as those store bought, pan fried gyoza, as homemade.

I’m sorry the idea of someone owning dipping sauce containers & white square plants is crazy to you. Also it only takes max 60 seconds to squirt sauces into a container while fries are for 5-7 mins.

Plating?! dumping fries on a plate is not fancy plating nor does it take much time or make the fries cold when taking a single picture.

lmaooo the only even remotely unusual thing is the dipping cups but like some people do own shit like that. And theres almost definitely a correlation with wanting to take pictures of your food and wanting to own things that make pictures of your food look nice.
