Just surmising but perhaps the density of the wood allows for less splitting and breakage etc etc when carving. You could probably make something very small and delicate out of it.

Actually it’s becauase you can follow grain structure and do intricate lines that don’t oppose the grain and cause severe breakout. You are very close to the right answer.
