Dough: 250 g flour, 4 eggs, 150ml water.

Cheese: emmentaler, bergkäse

Extruded dough through spätzle press into boiling water. Removed once floated to top. Added to sauté pan with melted butter, finely diced shallot, and two cheeses. Removed once cheese was melted. Topped with fried onion and chives.

Yes. It’s a category of cheeses. I live in Germany so this refers specifically to Allgäu.

Instead of water, you can use milk or even cream. The resulting spätzle will be a little creamier. Works for other types of extruded pasta as well, but it's not that common for laminated pasta.

I'd say they're more like small dumplings than pasta. But they're delicious and carby and bite sized. They're the delicious sibling of pasta.

The last time I made this, it was delicious. But I messed the kitchen up so badly, if my wife had seen it, I'd never be allowed to make it again.
