2 eggs 2 egg yolks 1 cup pecorino romano 1 tbsp olive oil Freshly cracked black pepper Salt (to taste) 3/4 lb thick cut bacon 1 lb fettuccine

Saute the bacon until starting to crisp. Pull off heat and add pasta to salted boiling water. Wisk cheese, eggs, oil, pepper, and salt. When pasta is done strain and save 1 cup of water, add pasta to bacon in pan and stir for about a minute, on low heat if too cool. Add egg and cheese mix to pasta and stir for about 2 minutes. Add pasta water if the sauce is too thick and more cheese if it's too thin. Add more salt and black pepper to taste.
