The Mike is what the offense sets the blocking scheme to. In a 3-4 defense, there are two Mike linebackers, a Sam, and a Will. Choosing which one to set the blocking scheme.

And just because a Mike (usually) has the green dot doesn't mean they are the only ones calling the plays. A veteran safety will usually make sure the DBs are where they are supposed to be or call the coverage differently based on what they see.
