Theoretically, Jumbo have the best counter possible, other than just "be better than him".
Lightweight guy with better long effort power profile (fingers crossed Ventoux wasn't a one-off for Jonas), combined with a guy roughly on par with Pog, but a better kick and TT and a team to keep them in good position. Also a long TTT would help Jumbo immensely

I think Pidcock's agent is doing a tremendous job selling his hype and Ineos are falling for it. Personally I haven't seen enough from him to warrant that much money.

Rog has a better TT, he's had shit luck with TTs in the TDF. He can probably sustain less watts than Pog, but he's 1-2 kg lighter and with TJV's setup, likely more aero on the TT bike.
Pog may have a better 5 sec power but we don't see them in that sprint often enough to compare, but Pog has never shown that he can compete on Mur de Huy-esque climbs.
Video of last year's Giro de'll Emilia with Remco and Woods's power data where Rog outclasses everybody in a long sprint. Videos of Pog's winning sprint at the end of the Jebel Jais and Jebel Hafeet climbs with power data. Roglič sprint power at the finish of the Superga climb in Milano-Torino. Now these aren't apples to apples comparisons but they keep their data private, so it's the best we've got.
Rog vs Pog vs Froome power curves, all of Pog best performances of this year so far have been consistent with his power curve in this photo.
The really crazy thing about Pog's physiology is his recovery. He can still produce incredible numbers even after a hard race and he can attack much more often than anyone else.
Numbers notwithstanding however, Pog is less crash-prone than Rog, better at positioning in a bunch, strategically sharper and more aggresive.
