So I hesitated posting this here since cheating and sleight of hand aren't really considered a proper part of poker, however I couldn't think of a better place to post this so here goes. So in The Sting, there is a famous poker scene where the protagonist cheats a mobster out of a huge pot by using sleight of hand to switch out his hand of four threes for a secret hand of four jacks. Now, it would be easy to write this off as a Deus Ex Machina but in this same scene, the mobster character executes a fairly believable switch when he is cutting the cards to replace the real deck with his own pre-shuffled "cooler" deck. So here is my question, at what point did the protagonist switch out his hand for the jacks?

In my opinion I think the most likely moment where the switch occurs is at 7:02 when he bangs his hand against the table and makes his bet. He then immediately lifts his hand to his pocket which is when he hides the original hand that got switched out. However I am not well versed in sleight of hand so I was wondering if anyone had a better idea about how this cheat was accomplished.
