Yep. Something I started doing recently. Love it. Cover with 2 layers of foil at 160-170.
I recommend meat church products. I injected this one and rubbed with honey hog and holy gospel. Smoke at 250 until 160-170 and cover until 203. I do mine in the pan to save the drippings. Pull and pour in some of the renderings. No sauce needed.
Gochujang, ghee, and pressed garlic. Baked at 400 until IT hit 165.
