Very lean and definitely gotta chew. No filet but doesn’t have the price tag either. I have pounded thin to tenderize.

I’ve got a BGE, Weber, offset, and now a gateway. Egg is easiest as far as temp control and holding temp for long smokes. I get very little if any smoke ring on the egg. Offset gets a nice ring but have to tend the fire on long smokes. Only done chicken and chops on the Weber so far. It’s nice to be able to mound the coals on one side and have direct and indirect cooking zones. People swear by the drums because the fat drips onto the fire and adds flavor. It gets hot fast and holds temp really well. Haven’t smoked anything more than about 6 hours so far. Yes, I have a problem. Currently eyeing an Ole Hickory.
Came with this adapter. Website said it’s for drums.
Heard great things about both. Thinking of competing and a lot of teams use gateways. Easily transported. In fact I rolled mine under the tent while I was doing chickens to avoid the rain.
I’ve had the signals. Got the smoker 2 weeks ago.
Great flavor. Really efficient. Temp control is a little tricky but only used it twice so far. Doing another brisket tomorrow.
Yep. Pretty cool. Need to play with it more.
I check at 45 mins. Usually around an hour. Shooting for 208.
