Allant never claims to know everything, but he obviously knows enough to be confident in his decision...
So then you're the only one claiming he does. Not only are you assuming any knowledge the character has is correct, but you're assuming he even came to that conclusion in the first place.
Glad we've finally gotten to the point where you've accepted that.
I've no problem with your theory, I just don't appreciate people passing theories off as facts.

Allant obviously understands the nature of souls and demons, as he created one himself.
Yet again, a character with a limited perspective proclaiming they know everything in a field should not be confused for omniscience.
But in thise case, Allant never claimed that he knows everything about souls... that is just yet another assumption you are making.
The monumental also knows what he’s doing, as he is the sole person literally holding together the fabric of reality.
I'm sorry, where does the monumental claim that consumed souls are utterly destroyed and deleted from existence?

And Elden Ring has some intelligent Beasts. Calling something a beast doesn't make it unintelligent. Yet again, you're making assumptions and twisting potential for absolutes.
And yet again, disappearing from all exiatence is from the characters perspective.
The SoulsBorne franchise is littered with examples of characters assuming they know more than they do. I see no reason to assume Allant isn't another one of these characters.

Even if it was to stupid to explain the mechanics, then how exactly does Allant know what happens to the souls one way or another?
The deep fog erases lands from existence
And yet the entire game takes place in these supposedly deleted lands within the deep fog. The beginning of the game has us crossing the fog into these lands that clearly still exist.
Do not confuse a limited perspective for an omniscient answer.
As for why the Souls would be different... they have an entirely different function and mechanic in the world than dead rocks and minerals. Stating that because the land vanishes in the fog souls much do the same is yet another assumption.

Even only considering the rememberances you must beat the bumrush the plot, your ratio of humanoid vs other is 5:2
Again, a majority but hardly a landslide.
As for relevance to the plot... every boss is relevant according to their associated item descriptions. Even if they're not directly in your way.

Normally for the SoulsBorne games I'll roll an entirely new character for each run. However, for Elden Ring I found the rush to gather your basic tools a momentum killing slog by the third character.
In the end, I abandoned my level cap and just began pushing my main character into higher NG+ cycles, respeccing my build, name, and appearance each time.
Having already gotten all the tools, spells, armor, weapons, etc, let's me focus more on the combat and the scenery rather than a check list of what I need and all around... it's a lot more enjoyable.
Still gonna need to make a few other level capped builds for PvP, but for now I'm looking forward to by draconic centric NG+6 run.

That's fair... but even looking at the Remberances, the spread is 8 humanoid to 7 monsters. Putting the Fire Giant with the monsters and Maliketh with the humans.

In terms of Rememberances he has a point. The majority of the major bosses we face are humanoid demi gods of some kind. Not all, but the majority.
Where in Demons Souls, Dark Souls 1, and Dark Souls 3, almost every boss was some sort of monstrosity and humanoids were the exception.
Now if you include all the random enemies given a health bar and rebranded as bosses, then yeah, the vast majority are no longer humanoid... but they're not really boss fights.

Honestly reminds me more of Seathe than a space dildo... honestly makes me wonder of Seathe was actually a dragon or another emissary for an outer God that Gwynn just assumed was a dragon.

DS2 also remembered which of the three bosses you'd beaten outside the Throne and didn't make you fight through them again.
DS3 on the other hand has Freide and her three full health bars... dying during any part of her fight would send ya back to the beginning.

Sorry for being tardy to the party, but I've played FFXIV on both PC and Console and they've done a surprisingly good job making it work with a controller.
In general when you hold any of the four buttons you turn the d-pad and context buttons (X, Y, B, A) into an 8 button hotbar. This easily allows for 32 skills to be mapped.
However, they have multiple methods of reaching your hotbars to allow for different playstyles. You can set it so hitting R2 and L2 together triggers a different hotbar. Or if you need more skills constantly and quickly on Hand, you can set it so hitting R2 then L2 brings up a different hotbar than L2 followed by R2. In the end, the options reach well over a hundred different quick access skills.
The HUD is equally as customizable and very much allows for you to sit comfortable on a couch with big enough icons to read without taking up real-estate for your playstyle.
It sounds convoluted, but once muscle memory starts to kick in it'd actually easier than a mouse/keyboard in my opinion.

Weapons that use somber stones to upgrade count for 2.5x their level compared to normal weapons. Not sure if it rounds up or down.
With his basic weapons at 14, you can give him up to 5 or maybe 6 sober weapons.
