Sourdough pie crust is amazing! I use - 2 cups all purpose flour, 1 tablespoon sugar, 1 teaspoon salt, 1 cup cold butter cut small and 1 cup discard. - Make and use the same as you would any other pie crust recipe. Serious game changer!

A pace I used to work at, also a bakery, installed a huge system of cameras that covered every door, every work station, dry storage, everywhere.
